AVOCADOS, STRAWBERRIES, AND SPINACH… OH MY!

Summer time is here, and we can't think of a better way to celebrate than with the fresh flavors of summer fruits and vegetables. We uncovered one of the most delicious summery salad recipes that is sure to be a crowd-pleaser. Packed with nutrients and fresh, wholesome ingredients, you can't go wrong this recipe.

We visited gimmesomeoven.com, a creative and inventive food blog created by Kansas City native, Ali. Here, we stumbled upon a recipe entitled "Avocado Strawberry Spinach Salad With Poppy Seed Dressing" that we thought was an amazing mix of crunchy greens, almonds, and sweet strawberries paired with the creamy texture of avocado.

Ali's inspiration for this recipe came from a trip she had taken to California for a food blogging conference. Suffice it to say, there were lots of avocados involved as well as a number of conversations with other food bloggers who shared their ideas for keeping things fresh, wholesome, yummy, and simple. As you can tell, this recipe is jam-packed with ingredients best grown in the Cali sun.

Avocado Strawberry Spinach Salad With Poppy Seed Dressing

Serves: 2-4

Ingredients (Salad)
6 cups fresh baby spinach
1 pint strawberries, hulled and sliced
1 avocado, diced (or you can double this to 2 avocados)
4 ounces crumbled gorgonzola or blue cheese
¼ cup sliced almonds, toasted
half a small red onion, thinly sliced
poppy seed dressing (recipe below)

Dressing
½ cup avocado oil (or any oil, such as olive oil)
3 tablespoons apple cider vinegar
2 tablespoons honey
1 tablespoon poppy seeds
pinch of ground dry mustard (optional)
salt and pepper
 

Directions
For salad:
Toss all ingredients together with your desired amount of dressing until combined. Serve immediately.

For dressing: Whisk all ingredients together until combined.
